Yam is one of the staple Nigerian foods that cut
across many cultures and has versatile ways of cooking it. You can boil
or fry yam, roast or bake it, pound or mash it, as well as grate it too.
Yam pottage, fried yam (mostly called yamarita) or boiled yam with stew are some of the ways yam is easily enjoyed.
Children can get bored of yam quickly and here are 4 other ways to
make this yummy tuber into some kid-friendly recipes that they can as
well take in their lunchbox as a school snack/meal.
Yam & Corn Fritters – Mashed, yam, corn and cheese makes this a yummy yam snack or breakfast for the kids.
Yam Pancake – This is very easy to make and will make a good breakfast with pap for the kids.
Yam Cookies – Children can be attracted by some
simple creativity. Rather than leaving those boiled yams looking big and
plain in their face, use a cookie cutter and make different shapes out
of them. You can also cut into chips and serve with mackerel egg stew.
Yam Croquette
– Before you say we are wasting yam by cutting yam into cookies, this
yam croquettes can be made with the crumbs and bits that are left from
cutting out those cookies above. Save them up and make this lovely
finger food that even your toddler will enjoy.
Crispy Yam Bites
– Somewhat like yamarita but made crispier with cornmeal and cut into
bite sizes that makes it easier for kids to pop into their mouth.
